This season, Kuma no Yakitori presents a new omakase course under the theme "Dashi no Kyō: The Resonance of Respect in Every Drop." This course pays homage to dashi, the broth that is considered the soul of Japanese cuisine. The restaurant uses the concept of "Kyō" in this course.
